Heat a medium size pan or skillet to medium heat with olive oil. Add shredded hash browns and cook until brown. I like to sprinkle black pepper, pink salt, and garlic powder into the potatoes for extra flavor.
Chop a handful of red onion, red and orange bell peppers, and sautee them until soft in the same pan as the hash browns. Crack 5 eggs into a mixing bowl and add 4 or 5 dashed of green pepper Cholula, a splash of milk, and whisk. Pour whisked eggs into your heated pan and fold into hash brown mixture.
Sprinkle with pepper jack cheese and set aside with lid on top of pan. In the microwave heat up freshly made flour tortillas for 25 seconds. Combine scrambled eggs with cheese into the warm tortilla and add a few extra dashes of green pepper Cholula. Wrap in foil to keep warm and enjoy whenever! Should Make 4-5 tacos.
